Lets Make Coconut Milk

Homemade Coconut Milk * Giveaway!!

I am so excited to be giving away the equivalent of a couple cases

of homemade coconut milk this week!

The winner of this giveaway will receive a gallon of Organic Shredded Coconut from Tropical Traditions, and a Nut Milk Bag from me, Betty Rawker. Your prizes will also be shipped to you for free. Giveaway limited to residents of USA and Canada.

You can also use this dried coconut from Tropical Traditions for all sorts of treats, like these Raw Goo Goo Clusters, Paleo Samoa Girl Scout Cookies, or Grain Free Raspberry Bliss Bars.

For an excellent homemade coconut recipe and tutorial video, you can visit Tropical Traditions recipe page to see how they recommend making your homemade coconut milk from dried coconut. Also, see their video on making coconut milk below!

Below is my simple version of the recipe.

Homemade Coconut Milk:

  • 1 cup dried coconut flakes
  • 2 cups+ hot tap water*

*To make a thinner coconut milk, just add another cup or 2 of water.

Blend coconut and hot tap water together on high. Pour through a nut milk bag. You now have close to 2 cups of coconut milk to use in smoothie, soups, or baking! You can also save remaining coconut pulp to use in other recipes. Here is a great recipe for a grain free “oatmeal” cookie from Against All Grain where you can use the coconut pulp in place of the dried coconut called for in her recipe. (Just use flax “eggs” to keep it vegan if you’d like! I find flax goes really well in cookies too!)

Please note, this homemade coconut milk when used right away is a pretty good replacement for what you might find in a can, but once you refrigerate this homemade milk it will separate quite a bit, and you will end up with a thick and pretty hard layer of coconut fat at the top. I just blend it back together and use it just fine. Just don’t expect it to create a super soft layer of fat as found in most cans of full fat coconut milk. I often use the canned coconut milk fat for whipped cream, but it is not possible to do the same with the homemade version.

Winner will be announced on October 30th, 2013. Limited to residents of the USA and Canada.

Contest has ended.

This is so cool. If I won, I’d give the bag to a friend, but keep the coconut for myself!

My favorite recipe that uses dried coconut is ‘coconut tofu.’ Cut firm tofu into small squares, dip in a batter of flour and liquid, then roll in coconut shreds and can add s little spice and sweetener. I saute them with a small amount of oil until golden. These are great in salads, or to snack on, or have for dinner!!!

I use dried coconut in granola bars and coconut pie. The great thing about dried coconut is you can throw it in just about any baked good and it turns out great.

My go to snack is to make energy bites. I love em. I use coconut oil and milk and raw coconut in so many desserts, entrees and for oil pulling. I mix coconut in with nut butter and honey then usually add dry fruit, sometimes chocolate chips and sometimes chia seeds. I then roll the whole mixture in coconut again. Yum.

  31. I love to make what we used to call “Dolly Madison’s”—cookie bars with coconut, chocolate chips, graham crackers, nuts, condensed milk. I now make a healthier version with unsweetened coconut.

  32. I throw a little into my apple crisp recipe and it’s yum!

My FAVORITE thing to make is the Raw Rasberry Bliss Bars – with strawberries. They taste like a nutri-grain bar only so much better – and you have to make the glaze frosting too. It is such a treat!
