Here is a great easy raw treat that will help you start your morning off right!
Because sometimes you just feel like eating dessert for breakfast!
Chocolate Chia Pudding:
- 1 cup “milk” (almond milk, hazelnut milk, hempseed milk, etc)
- 2 medjool dates (or 2 tbsp sweetener)
- 1 + 1/2 tbsp raw cacao powder
- 1/4 cup chia seeds
Blend the first 3 ingredients together, or you can stir if you aren’t using whole dates as your sweetener. I like to blend so that even if I am using honey to sweeten instead of dates, everything gets well combined.
Pour into a glass jar or bowl. Stir in chia seeds. Let set a few minutes, stir again. In about 15 minutes you will have a nice thick pudding.
Top with fresh fruits: sliced strawberries, pitted cherries, blueberries, or blackberries.
Optional: add a dollop of coconut cream. You can make fresh coconut cream with a young thai coconut by blending up the coconut meat with a dash of coconut water, or keep a can of coconut milk in the fridge overnight, and when you open it in the morning there will be a thick layer of coconut cream on top.

I decided to put this in my Cuisinart Ice Cream and Sorbet maker and see what happens, it came out tasty 🙂 I accidentally added maple syrup for some reason. I must have mixed up this recipe with another one I was just reading.
