Below is my simple version of the recipe.
Homemade Coconut Milk:
- 1 cup dried coconut flakes
- 2 cups+ hot tap water*
*To make a thinner coconut milk, just add another cup or 2 of water.
Blend coconut and hot tap water together on high. Pour through a nut milk bag. You now have close to 2 cups of coconut milk to use in smoothie, soups, or baking! You can also save remaining coconut pulp to use in other recipes. Here is a great recipe for a grain free “oatmeal” cookie from Against All Grain where you can use the coconut pulp in place of the dried coconut called for in her recipe. (Just use flax “eggs” to keep it vegan if you’d like! I find flax goes really well in cookies too!)
Please note, this homemade coconut milk when used right away is a pretty good replacement for what you might find in a can, but once you refrigerate this homemade milk it will separate quite a bit, and you will end up with a thick and pretty hard layer of coconut fat at the top. I just blend it back together and use it just fine. Just don’t expect it to create a super soft layer of fat as found in most cans of full fat coconut milk. I often use the canned coconut milk fat for whipped cream, but it is not possible to do the same with the homemade version.

Can I use cheesecloth for my nut bag to make the coconut milk?
Yes, you totally can. The nut milk bag is just a sophisticated industrial strength, reusable, machine washable, version of a cheesecloth.

I’ve only made granola with coconut flakes, and I’ve never tried to make coconut milk, but I would love to. I’d also love to make coconut butter.

My favorite recipe that uses dried coconut is ‘coconut tofu.’ Cut firm tofu into small squares, dip in a batter of flour and liquid, then roll in coconut shreds and can add s little spice and sweetener. I saute them with a small amount of oil until golden. These are great in salads, or to snack on, or have for dinner!!!
Everything. I use coconut for everything! My favorite recipe is probably the standard macaroon – or blending it with nuts/manna for a nutty roll.

I use dried coconut in granola bars and coconut pie. The great thing about dried coconut is you can throw it in just about any baked good and it turns out great.
Coconut milk + avocado + raspberries. Blend together and freeze to make “ice cream.”
I love using home made coconut milk for my smoothies.
I love using dried coconut for scones and coconut chicken, and coconut milk for Thai curry. Yum!

This is SO awesome! I’d love to try all of the above – the coconut milk using the nut milk bag (never even heard of it – can’t wait to try!!), and then the non oatmeal oatmeal cookies 😉

I’ve always wanted to make coconut milk. Sounds awesome. I heart all things coconut. I could just eat it by the handful.
My go to snack is to make energy bites. I love em. I use coconut oil and milk and raw coconut in so many desserts, entrees and for oil pulling. I mix coconut in with nut butter and honey then usually add dry fruit, sometimes chocolate chips and sometimes chia seeds. I then roll the whole mixture in coconut again. Yum.
I love to make what we used to call “Dolly Madison’s”—cookie bars with coconut,chocolate chips, graham crackers,nuts, condensed milk. I now make a healthier version with unsweetened coconut.
I throw a little into my apple crisp recipe and it’s yum!
I cook my basmati rice with coconut milk. Learned that from an awesome cook in Jamaica.

My FAVORITE thing to make is the Raw Rasberry Bliss Bars – with strawberries. They taste like a nutri-grain bar only so much better – and you have to make the glaze frosting too. It is such a treat!
